Set iTunes to pause automatically.
iTunes Sleep Mode is a very useful tool that will automatically pause iTunes when you want it to. You can set it to pause on one of three different triggers. You can set it to pause at a certain time (i.e. 2:00 PM), after a delay (for example, 5 minutes in the future) or when a certain song is about to start.
